Chinese Porridge ('Congee' or 'Jook')
(Serves 4 people)

Ingredients:

  • 300g chicken bones or spare ribs
  • 1 cup Brotherhood Brand Long Grain Rice, washed
  • 10 cups water
  • 1/2 cup raw peanuts
Seasonings:
  • Salt
  • A few drops Yuquan Pure Sesame Oil
Garnishes:
  • 80g Yuquan Szechuan Preserved Vegetables, chopped finely
  • 1 spring onion, shredded
  • 1/2 iceberg lettuce, shredded
Method:
  1. Put the ingredients into a large pan, cover and cook on a low heat for 5 hours, stirring every now and then, so it does not stick to the base
  2. After this time, the rice should look of a similar consistency to porridge. If not, continue to cook on low heat until ready
  3. Season with salt and cook on medium heat for a further 5 minutes
  4. Place garnishes in separate bowls
  5. Serve with garnishes and Pure Sesame Oil to flavour
