Chinese Porridge ('Congee' or 'Jook')
(Serves 4 people)Ingredients:
- 300g chicken bones or spare ribs
- 1 cup Brotherhood Brand Long Grain Rice, washed
- 10 cups water
- 1/2 cup raw peanuts
- Salt
- A few drops Yuquan Pure Sesame Oil
- 80g Yuquan Szechuan Preserved Vegetables, chopped finely
- 1 spring onion, shredded
- 1/2 iceberg lettuce, shredded
- Put the ingredients into a large pan, cover and cook on a low heat for 5 hours, stirring every now and then, so it does not stick to the base
- After this time, the rice should look of a similar consistency to porridge. If not, continue to cook on low heat until ready
- Season with salt and cook on medium heat for a further 5 minutes
- Place garnishes in separate bowls
- Serve with garnishes and Pure Sesame Oil to flavour
